2-Day Hog Processing Workshop: From Carcass to Freezer-Ready Cuts
Have you ever wondered what it really takes to turn a pig into the pork in your freezer?
Join us at Perennial Acres Holmestead in Jonesborough, Tennessee, for a small workshop where James and Audra Holmes will demonstrate the process of breaking down a hog—from carcass to finished cuts. Over two immersive days, you’ll learn the traditional skills and practical techniques used to process pork (and other animals) at home.
This workshop is designed for homesteaders, hunters, and anyone interested in understanding where their food comes from. Whether you raise your own animals or are simply curious about the process, you’ll leave with the knowledge and confidence to process pork yourself.
What to Expect
Day 1: From Carcass to Primal Cuts - Saturday, 9:00 AM - 1:00 PM
We’ll begin with a whole hog and work step-by-step through the early stages of processing, including:
• Overview of humane harvesting practices and the slaughter process
• Skinning and evisceration
• Identifying major muscle groups
• Breaking the carcass down into manageable primal cuts
By the end of the day, you’ll understand how a whole animal becomes the major cuts used in pork processing.
Lunch will be provided for day 1 only so we can take a break, share a meal, and continue the conversation.
Day 2: From Primals to Meal-Ready Cuts - Sunday, 1:00 PM - 5:00 PM
On the second day, we’ll take those primal cuts and transform them into familiar pork products, including:
• Cutting chops, roasts, ribs, and other common cuts
• Grinding and seasoning sausage
• Preparing pork belly for bacon curing
• Packaging and freezer storage techniques
• Tools and equipment used for small-scale meat processing
While participants will not be taking meat home from this workshop, the skills you learn can easily be applied when processing your own pigs, deer, goats, or other livestock.
About the Pig:
We will be processing a pasture-raised KuneKune pig born and raised on our farm.
Weather:
This is a rain-or-shine event, with part of the workshop taking place outdoors. Please dress appropriately for the weather and wear clothing you don’t mind getting messy. Closed-toe shoes are required.
Class Size:
To keep the workshop interactive and ensure everyone can see and participate, space is limited to a small number of participants.
